Smoked Mac and Cheese
Preheat grill to 300 F
Boil the macaroni shells "al dente". Save 1/4 cup of pasta water for later.
In a large pan, combine the macaroni and all other ingredients, except for the pasta water, milk, and Panko breadcrumbs.
Let the mac and cheese cook for 15-20 minutes.
Add pasta water and milk to bring the mixture to your desired consistency. Then cook for another 5 minutes.
Bring the mac and cheese off the cooker, and sprinkle wth the Panko breadcrumbs. Use a kitchen torch to lightly toast the surface.
