Remove any unwanted fat, skin, or loose flaps of meat that might burn on the smoker. Once done, you can score in a pattern of your choosing or not. Completely up to you!
Take the ham and cover it with a medium coat of Kosmos Q Dirty Bird Hot Rub. If you want less heat, you can substitute it for Kosmos Q Dirty Bird Rub (minus the HOT).
Next, add a medium coat of Kosmos Q Honey Killer Bee.
Let the ham sit at room temperature for at least 30 minutes, up to an hour.
About 15-20 minutes before you want to start cooking the ham, preheat the pellet grill with GMG Fruitwood Pellets to 275ºF (135ºC). You can also cook the ham in an oven.
Once up to heat, place the ham on the pellet grill and cook until it reaches an internal temp of 145ºF (63ºC). On the GMG pellet grill, you can place a probe in the meat and check the internal temp on the GMG app while it cooks. You can even set up a food profile to notify you once the meat has reached the desired internal temp!
Once the target temp is reached, pull the ham off of the grill and glaze with some Kosmos Q Maple Bourbon Rib Glaze for that sweet finish.
Loosely tent the ham with foil and let it rest for 30 minutes before serving. Voila! You've created a killer smoked ham!
There are a few things to look out for when choosing a ham. For one, many of the packaged hams you find will actually be pre-smoked. Whether you want this or not is completely up to you - expect a more pronounced smoky flavor from the pre-smoked hams.
This recipe is for a pre-smoked ham, but if you decide to go with a fresh one, you'll want the internal temp to reach 165ºF.
